Summer Treats

As you may already know, Summer is my favorite season. Warm sunny days, outdoor activities and no need to bundle up!
Since the weather is about to get even warmer, we thought it was the perfect time to share some of our favorite summer treats. They are made only with healthy, whole food ingredients 🙂

Banana Nice Cream

Banana Nice Cream is an incredibly simple, delicious and very affordable alternative to ice cream.

  1. Peel several bananas
  2. Cut into about 5 pieces each
  3. Freeze in a bag or container for at least a few hours
  4. Place frozen chunks into a high-powered blender
  5. Blend until tiny pieces (It may look like Dip N Dots when finished)
  6. As you scoop it out of the blender, the pieces will melt together more and become creamy.
  7. Add toppings if you wish (mix in some vanilla extract or maple syrup for more flavor)
  8. Serve immediately!

Smoothie Pops

  1. Make a smoothie you love (filled with fruits, veggies and collagen powder of course)
  2. Pour into popsicle molds
  3. Freeze for several hours
  4. Enjoy 🙂

Grass-fed “Jell-o”

For this recipe, you will need some juice and grass fed gelatin powder (I love Great Lakes Gelatin Co.’s Bovine Gelatin)

  1. Measure 6oz of juice and pour into small saucepan and heat on med/low.
  2. In a bowl or large glass measuring cup, combine 1 1/2 TBS gelatin powder with 4oz of cold juice and stir.
  3. Let this combination sit and thicken for 2+ minutes. It should resemble applesauce when ready.
  4. When juice is warm and possibly slightly steamy, pour into gelatin mixture and stir gently.
  5. Pour mixture into a shallow, wide dish and refrigerate for 4-6 hours or until firm.
  6. Cut into squares and serve
